Rustic Tomato Tart with Caramelized Onion Jam
INGREDIENTS
2 12” homemade or premade pie shells
Two large tomatoes
4 oz herbed goat cheese
½ cup shredded parmesan cheese
4 tbsp. of Jammy Yummy Caramelized Onion Jam
METHOD
• Preheat oven to 425 degrees. Spray a spring form pan with non-stick cooking spray.
• Line the spring form pan with the pie dough allowing the rough edges to hang over the top of the pan.
• Add ½ the parmesan cheese and spread evenly over the dough in the bottom of the pan
• Add a layer of sliced round tomatoes & add spread 2 tbsp of onion jam onto the tomatoes
• Repeat the layer of parmesan, tomatoes, and jam
• Slice the goat cheese log into round or crumble over the top
• Fold excess dough over the top leaving the center open. Don’t worry about making it to pretty, remember this is a rustic tart!
• Put in the oven for approx. 45 minutes or until the top is brown the juice inside the tart is bubbling. Allow to cool completely before slicing and serving.
