Red Pepper Goat Cheese Truffles with Pistachio Crust
1 8oz package of softened goats cheese
2 tbsp Jammy Yummy red pepper jam
1/2 cup pistachio nuts, finely chopped
2 tbsp fresh thyme, finely chopped
Place goat cheese in a bowl with red pepper jam and mix gently until most of the jam is combined.
Use the palm of your hands to roll 1tsp full of the goat cheese mixture into a ball.
Add chopped pistachio and thyme to a plate, and roll goat cheese balls to form a crust.
Makes about 10 truffles
Refrigerate until serving.
